Danbo Labo is a new concept restaurant in South Brisbane from the creators of Ramen Danbo. Located right next to the original shop, this "laboratory" is a restaurant with an evolving menu. And for its opening, they offer a vegan menu with ramen, gyoza and more.
Drawing inspiration from Fukuoka, the birthplace of Tonkotsu ramen, the opening menu is concise. It features rich and creamy bowls like the vegan tonkotsu, vegan miso tonkotsu, and vegan negi-goma (spring onion & sesame) ramen. Each bowl is generously portioned with five slices of atsuage tofu and can be customized to your preferred spice level. The Hakata-style vegan gyoza is also a solid and delicious side dish to complement your meal.
It is important to keep in mind that while the initial food menu is entirely vegan, they may not stay vegan in the future. And in the opening menu, not all drinks are vegan, namely the Calpis drink.
